it would help if we knew your location/starting point and when you're thinking of going but you should join us on a run too.... I've seen so much more of UK since going away with the boys and girls here, it's certainly an eye opener. Certainly helps eliminate the intimidation of long distance riding when you're going away with friends.

I'm of to South Wales have done West Country & East Anglia self catering Wales is much cheaper and the Brecon Beacons great for bikes, going by car this time as 3 on a bike + luggage is a bit much, but did a lot of the Breacons when I was in the SAS did a ride out from Builthe Wells with Harley Davidson and now have to go back.

Carmarthenshire, Brecon Beacons, Border country - Hereford up to Shewsbury are all great. The Wenlock Edge from Church Stretton is a "must do" if you are up that way. The long Myndd also.
If crossing South Wales the M4 is the easiest way to get beyond Port Talbot and Swansea. but the older roads east of Cardiff are fine. Cardiff is well worth a visit. If you are into Impressionist art they have a very good collection and The Bay is worth a look.

Head further west into mid-Wales and you'll get some of the best biking roads around - not many nutters, fantastic road surfaces and lovely sweeping bends.... nice countryside too! Aim for Builth Wells, Rhayader, Newtown and across to Aberystwyth.
Don't know about self-catering but there are lots of campsites and farm B&Bs. The locals are friendly too.
