I would be grateful if someone can advise me if it is possible/desirable to fit an oil cooler from a later model to a 1993 600 diversion thanks

Essentially:
Possible? No. Desirable? No.
I thought your bike was a 2000 model? The earlier ones won't have the mounting for a cooler (so you'd have to fashion some) & they won't have the oilways (so you won't be able to plumb it in.)
The far more common question is whether newer models can do without the oil cooler, because they tend to get damaged / leak at the unions. The answer there is yes, as a number have successfully bypassed it.

Possible? Everything is possible. You could easily hang it if you made some brackets, you could probably use simple stainless P-clips at the top, the bottom might be trickier.. If you got the oil filter adapter and bolt from the later bike you would have the outlets. Then you just need to find a decent used oil cooler hoses (lol) and oil cooler (lol).
After that you'll have a bike that didn't benefit from it that much in the UK climate, but is more prone to leaking oil everywhere.
I am not sure why they added a cooler on the later model, but my guess would be it runs leaner due to emissions regs or just for more power, and on an air cooled engine that means hotter. They definitely fitted a different model of carburetor, which would suggest that.
Basically, it is possible but it is not recommended nor really worth it at all.
