On the 98 600 the mixture screws are behind rubber caps on sides of carbs. But they are best left alone. Standard 600s have test points on the downpipes for individually gas analysing each pipe. Not really an amateur task.
Mixture problems are more likely to be dirt in various places or the chokes sticking open. So a good clean out, check everthing works and some injector cleaner in the fuel should be enough.
