Emulsifying. Do you only do shortish journeys? Also check the breather pipes for clogging, common problem. Where abouts are you based, a little bit more info would be helpful Regards, Trev

This will be my second winter on my 600N and as I only do a short commute and runs to the shops etc at this time of year I also suffer with creamy oil.
I rember reading on here before I bought the bike that it was a very common problem and the trick is to every so often, take it for a good 50 mile plus run, good blast and when you come back, remove the filler cap for an hour or so (not if its raining lol) to let any remaining condensation out. Really does work a treat.
I wouldnt worry too much if you change the oil and filter and clean the breathers, air box no later than every 4K miles it will be fine, just looks a bit bad. Its also normal to get water in the sight glass too so it looks like its full of water and its not. If you are unsure drain it out into a basin and check.
I change my oil and filter every 2K ish to be on the safe side and so far so good.
